- 3 cups carrots (peal & cut)
- 10 Saltine Crackers – crushed
- 2 Tablespoons minced onion
- 2 Tablespoons melted butter
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup cheddar cheese
- Boil carrots in salted water until soft (20-25 min)
- Drain & save 2/3 cup liquid
- Mash carrots… Hand mash.
- Stir in ingredients… Add liquid
- Grease bowl… add cheese on top…
- 350 for 15 minutes.
