The ALL MARINE RADIO Head Chef joined the program to discuss one of his favorite dishes — “The Mixed Seafood Grill” — which is not an easy dish to prepare.  The dish is part scampi, crab cakes, scallops, rice or mashed potatoes and asparagus.

The Chef also give his advice on making GREAT baked potatoes, a side dish that he absolutely LOVES with crisp skin.  Here are his directions:

  • Oven temperature:  450-500 degrees fahrenheit
  • Cooking Time:  45-60 minutes (depending on crispness desired)
  • Potato Preparation:  coat potato with a light coat of olive oil; apply kosher salt to the potato and spread evenly over the skin
  • Air Venting:  a single knife insertion at each end of the potato, to a depth of approximately 1/2 of an inch
